“Chef of the Year” from Munich: Miguel Marques, head chef at Dallmayr’s “Alois” – Munich

At the finale in Bonn of the “Chef of the Year” competition, Miguel Marques impressed – even there, it has to be said. The just 26-year-old became head chef at the Dallmayr Restaurant Alois and is therefore also responsible for the two stars in the top gastronomy – at least temporarily as interim chef.

The Portuguese came to Alois in October 2022 with Max Natmessnig, the Austrian superstar among top chefs, and worked as his sous chef. When Natmessnig moved on to New York almost a year later, his young second hand was given the chance to become head chef at Alois until a successor was announced in a few weeks.

On Friday morning at the Alois, Miguel Marques didn’t show anything, but he then admitted: “Sure, I’m a little nervous.” After all, the candidates were told in advance what could be used in the starter and dessert, “only the main course is a black box”. The finalists only found out on Monday. Apparently a successful surprise for Miguel Marques.
