The German edition of the Michelin Guide will be presented in just under a month, and that’s why the gastronomy scene is happily speculating: who could gain weight and who could lose a star? The starter “Ossetra Royal Caviar from Petrossian” according to Eckart Witzigmann is a dream of caviar and beetroot on a plate of jellied beef consommé, which Chmura has supplemented with diced eel. The way he delicately balances the individual aromas and robust, powerful flavors of the components reveals supreme mastery. Likewise the light and carefree “Soufflé Scallop” according to Heinz Winkler with leaf spinach and champagne sauce – as if it had no origins in water, but rather a perfect cross between air and earthly gravity.

Unfortunately, this isn’t a cheap treat; The starters cost over 40 euros, the main courses up to 88 euros – that’s how much you pay for the “Veal Sweetbreads Rumohr”.
