News from the gastronomy scene: Everything from deer and lots of free beer – Munich

When a Bavarian hears the term “Maibock”, they probably first think of a type of beer and of Django Asül, because he always gives the satirical Maibock speech at the Hofbräuhaus. The Maibock is not only a particularly strong beer, but also a delicacy in game cuisine. These are young, one-year-old roebucks whose closed season ends at the end of April; they can then be hunted from May to October. Their meat is considered particularly tender and marks the start of the game season. Keep it that way too Michael Emmerz and Andre Wöhnerthe two chefs of the Beetle taverns in the main building on Prinzregentenstrasse. Next week they will be inviting you to ” Maibock special” in four courses. They process the entire animal, “from nose to tail”, as it is called in kitchen language, i.e. from the snout to the tail. You won’t discover one or the other on the menu, but it’s good. For the starter you can choose between, quite the beetle: “Tatare from the scallop and venison fillet” and, a little more down-to-earth: “Aspic from the shoulder of venison”. The intermediate courses also sound interesting, either “venison beef tea” with creper roulade, goose liver and sherry or deer liver fried in butter with asparagus and chanterelles. The main course consists of either a classic saddle of venison or a “Pflanzerl from the leg of venison”. The dessert doesn’t have any deer at all; it mainly consists of blueberries with Greek yogurt. The four courses can be combined as desired. The price ranges between 22 euros for the dessert and 75 euros for the saddle of venison. They also have a Maibock on offer, the boys from Mathäser Bräu, but it has nothing to do with deer. The seven friends come from the Franconian Forest, from the small town of Naila in Upper Franconia, but they are not hunters, they brew beer. In October we acquired the license rights for the traditional Munich brand Mathäser Bräu – the Free State of Bavaria was proclaimed in 1918 in the now defunct Mathäserbräukeller am Stachus. They now want to get started with the new, old brand and traditional Bavarian beers and are celebrating on Saturday with 4,000 liters of free beer.
