Restaurant Portun in Munich: Gregor Goncharov and the “Alpe Adria” – Munich

The native Ukrainian, who was previously sous-chef at Le Deux, has now opened his own restaurant, Portun. Among his investors is Marko Pesic, the managing director of FC Bayern Basketball.

With “Alpe Adria” the normal newspaper reader thinks of the scandal surrounding the purchase of Hypo Alpe Adria, in which a financing gap of 3.7 billion euros suddenly opened up for the Bavarian state bank. Gerhard Polt summed it up nicely in one sentence: “The Landesbank is not a hole, a hole has an edge!” Alpe Adria is also a culinary term, and it has a very positive connotation: It describes the cuisine of the four countries between the Alps and the Adriatic Sea, i.e. Austria (especially Carinthia), Slovenia, the Istria region in Croatia and Italy especially in the Friuli region. The trend was made famous above all by the Slovenian cook Ana Roš, who many – Netflix and its famous “Chef’s Table” format above all – consider to be the best cook in the world.
