Turmeric Balls on Hummus and Pita Bread
For about 2 servings || Enjoy in 45 minutes
- 1 eggplant
- 2 handfuls of baby spinach
- Falafel mix or vegan mince, e.g. from Greenforce or Like Meat
- 1 clove of garlic
- 1 pinch chili powder
- 1 tsp turmeric
- 2 tablespoons oil
- Salt
- 2 pita breads
For the hummus:
- 1 can of chickpeas
- 100ml of water
- 1 tsp cumin
- ½ lemon
- 1 clove of garlic
- 1 tbsp sesame butter
- 1-2 tbsp olive oil
- Salt
- Wash the aubergine, cut lengthwise into 0.5 cm thick slices and add a little salt. Leave to stand for about 15 minutes, then drain and sear the aubergine slices in a preheated grill pan. Then salt and pepper.
- Wash and spin dry the spinach.
- Mix the falafel mix or the vegan mince with garlic, turmeric and chilli powder and form into small balls, fry in oil according to the instructions and then cut in half.
- Briefly fry the pita breads on both sides in the pan, then spread with hummus, distribute the spinach on top, place the aubergine slices on top and finally distribute the turmeric balls on top.
Hummus preparation
- Drain the chickpeas in a sieve and rinse with water.
- Squeeze the lemon and peel the garlic.
- Mix all ingredients to a light, creamy mass.
- Finally season with salt.
