Veganuary – Part 1: The classic now vegan: Maultaschen soup with homemade pasta dough

It used to be alcohol or sugar free January. Today people prefer to change their diet: “Veganuary” is popular again this year. If you want to eat vegan, you can try it now. Part 1 of our “Veganuary” recipe series.

Recipe for vegan Maultaschen soup with roasted onions

For about 2 servings || Enjoy in about 90 minutes

Maultaschen dough:

  • 20g vegan egg substitute
  • 100g flour (type 405)
  • 100g durum wheat semolina
  • 2 tbsp olive oil
  • ½ tsp salt

Filling:

  • ½ vegan minced meat, e.g. from Greenforce or Like Meat
  • 25ml oat cream
  • 50g baby spinach leaves
  • ½ onion
  • 2 sprigs of fresh parsley
  • 1 tsp medium hot mustard
  • 1 pinch nutmeg
  • 1 tbsp olive oil
  • Salt pepper

Onion topping:

  • 2 onions
  • 2 tbsp flour
  • 3 tbsp oil

Aside from that:

  • 1000ml vegetable broth
  • ½ bunch of parsley, finely chopped
  • ½ bunch of chives, cut into fine rings

Preparation:

Maultaschen dough:

  • Mix the vegan egg according to the instructions.
  • Now knead all the ingredients into a smooth dough. Then wrap the dough and let it rest in the fridge for 30 minutes.

Filling:

  • Wash and chop the spinach.
  • Peel and very finely chop the onion.
  • Chop the parsley very finely.
  • Mix the vegan mince with spinach, onions, parsley and the remaining ingredients for the filling.
  • When the mince is dry, add 125ml water and mix thoroughly. Then cool.

Onion topping:

  • Heat oil in a pan, peel the onions and cut into fine rings, dredge in flour and fry.
  • Then drain briefly on a kitchen towel.

Maultaschen soup:

  • Using a rolling pin, roll out the dough into a rectangle about 0.8mm thick.
  • Distribute the filling in the middle and always with a little distance over the entire length of the dough. Then brush the top and bottom edges of the dough with water.
  • Now fold the lower part over the filling, then lay the upper part over it. Press off the Maultaschen with a spatula.
  • Cut apart with a pastry wheel and check whether the dumplings are well sealed.
  • Bring the broth to the boil in a large pot, then reduce the heat and cook the Maultaschen in portions for about 10-15 minutes.
