Manuel Wiesner has just caught a cold, he is laughing and coughing at the same time. “We didn’t expect such a media hype after all,” says the 36-year-old, who runs the Swiss Wiesner restaurants together with his brother Daniel. Wiesner is sitting in one of his 34 restaurants, the Outback Lodge in Zurich, with a hot lemon in front of him and lunchtime guests eating “Aussie chicken wings” or salad with fried kangaroo strips. He wants to talk about what made him and his brother famous last February.
