Perhaps it is not without reason that one speaks of the rumor mill when it comes to unconfirmed assumptions. Because especially in gastronomy people like to chat and gossip, whisper and speculate. And the question “Who goes where?” moves everyone, no matter in which industry. The more prestigious the post, the greater the gossip. So after Hans Haas left as head chef at Tantris, the rumor persisted for a long time that the (then still) three-star chef Joachim Wissler from the Grandhotel Schloss Bensberg was moving from Bergisch-Gladbach to Munich. However, as we now know, it was never an option.
But it can now be speculated who the two-star restaurant Alois in the delicatessen Dallmayr as head chef. Christopher Kunz left the company at the beginning of May after four years as boss. The rumors are fueled by the fact that Munich currently no longer has a three-star restaurant. The previous incumbent, if you want to call it that, Jan Hartwig, has not yet opened his new restaurant. And if you want to get to the top now, a good opportunity would be to set an example by hiring a three-star chef. Then names like Christian Bau, the head chef at Victor’s Fine Dining at Schloss Berg in Saarland. However, he sees no reason to go there after 24 years. Christian Jurgens from Restaurant Überfahrt am Tegernsee also has three stars, but immediately denies it: “I’ve been looking for a little house on Tegernsee for me and my family for months – I’m not going to Munich after all!” Below the “Oligarch villa” category, the real estate market on Tegernsee is apparently empty, but that doesn’t seem to persuade Jürgens to change location.
The question remains what the top French chef Alain Ducasse, one of the most famous of his kind, in Munich in June? Is he there as an advisor, for Dallmayr, as is often whispered? After all, Christoph Kunz came out of his stable. However: His consulting fee should not be significantly below the annual salary of a top chef. And in truth, everything is a little more mundane: Ducasse, his former right-hand man, comes to the 50th anniversary of Tantris Matthew Hahn is now the top boss there.
So what’s up with all the rumours? A call to Dallmayr: “Nice try!” says spokeswoman Sunny Randlkofer and laughs, “but there is no name yet. We are looking, it will probably be September or October.” So let the rumor mill continue.
