A nutritious breakfast sets the tone for the rest of the day. It provides the body with energy in order to be able to cope with all upcoming tasks and challenges with flying colors. In addition to avocado bread, porridge and the like, the nutritious breakfast menu has a lot more to offer. How about a creamy curd casserole, for example? Satisfying, rich in protein and incredibly tasty at the same time.

All breakfast or what?

As is well known, opinions differ when it comes to nutrition, and this also applies to breakfast. Recommendations for the optimal first meal – if you take them at all in times of intermittent fasting – are a dime a dozen. The German Nutrition Society recommends a serving of fruit or vegetables, whole grain products, plenty of protein and enough liquid, preferably in the form of unsweetened tea and water. These components should always be included in a balanced breakfast. Shouldn’t be that difficult, right?

Fit enjoyment

The quark casserole tastes wonderfully creamy and is more reminiscent of a dessert than a balanced breakfast. So all the better that it has a lot to offer in terms of nutritional technology – double profit, so to speak.

Eggs, quark and spelled semolina form the basis. The former provide the body with a good portion of easily digestible protein. Spelled semolina provides complex carbohydrates, numerous minerals and fiber and thus contributes to lasting satiety. For the taste, coconut blossom sugar migrates into the dough, which – unlike table sugar – has a low glycemic index and therefore hardly causes the blood sugar level to rise. It also contains numerous vitamins and minerals such as iron, magnesium, zinc and potassium as well as the fiber inulin. Last but not least, blueberries provide the body with antioxidants, trace elements, vitamins and minerals. Of course, there are no limits to your imagination. Use the fruit you have at home right now and give the basic recipe an individual touch. Recipe for a cottage cheese casserole with blueberries

ingredients

  • 3 eggs (size M)
  • 100 grams of coconut blossom sugar (alternative: erythritol or table sugar)
  • 1 packet of vanilla sugar
  • 500 grams of low-fat quark
  • 1 teaspoon lemon juice
  • 1 pinch of salt
  • 50 grams of semolina (e.g. spelled semolina)
  • 2 teaspoons of baking powder
  • 125 grams of blueberries
  • Coconut oil for greasing the mold

preparation

  1. Preheat the oven to 180 degrees.
  2. Whisk the eggs with sugar and vanilla sugar. Add the quark, lemon juice and salt and stir well.
  3. Add the semolina and baking powder and fold into the quark mixture.
  4. Wash the blueberries, sort them and carefully fold them into the mixture.
  5. Grease a baking dish with coconut oil, add the mixture and smooth it out. Bake in the preheated oven for about 50 minutes.

Tip: If the casserole gets too dark, simply cover it with some baking paper.
