Anyone who eats in the Berlin star restaurant “Ernst” and wants to understand what happens in one of the internationally most hyped restaurants has to understand the head chef Dylan Watson-Brawn. It’s not always that easy.
The renowned restaurant guide Gault Millau has voted Dylan Watson-Brawn “Chef of the Year 2022”. Watson-Brawn has been running Ernst in Berlin since 2017. The restaurant testers write that in the fifth year of its existence, “Ernst” has reached a technical and conceptual maturity as well as consistent individuality, “which is extremely rare not only in this country”. At the center of the cuisine of the Canadian Watson-Brawn (born 1993) are Japanese techniques such as flavor images and uncompromising care in the quality of the products. “She has what is still a rarity in top-class cuisine: a clear, unmistakable vision.”
