Federal Food Minister Cem Özdemir (Greens) is opting for more “organic” in canteens, canteens and restaurants and is planning a new logo. But the industry is not satisfied. “There are still a lot of questions to be answered, especially with regard to the availability and affordability of organic food,” says the German Hotel and Restaurant Association. Whether the range of organic products will increase as the minister envisages depends in particular on demand from guests. In any case, the specifications of the planned new seal are extremely ambitious. With the logo, catering establishments should be able to identify the organic portion in their kitchen. The levels are gold with 90 to 100 percent organic, silver with 50 to 89 percent and bronze with 20 to 49 percent – each based on the monetary value of the entire purchase of goods. According to Özdemir, providers could use this to label their commitment to sustainable catering voluntarily, simply and verifiably and thus advertise themselves.
