Father of avocado toast, chef Bill Granger, has died

Australian chef Bill Granger has died of cancer in hospital. “He will be remembered as the ‘King of Breakfast’, for transforming unpretentious dishes into something special filled with sunshine and for driving the growth of informal, community-based Australian eating around the world. He will be deeply missed by all,” his family wrote on their Instagram page.

“Years before his time”

Bill Granger was born in 1969 in Melbourne, Australia. Self-taught, he became an influential restaurateur over time. In addition to a restaurant chain, we must add to the list his fourteen cookbooks, his five television series and his Medal of the Order of Australia in January 2023.

It was in his restaurant “Bills”, opened in 1993, that he popularized the recipe for avocado toast, a sandwich now famous on social networks and in trendy restaurants offering brunches.

On social networks, after the announcement of his death, many celebrities in the industry paid tribute to him. “What a shock… Bill left way too soon, a wonderful human being and a privilege to have worked with him. Such an inspiration to so many,” British chef James Martin wrote on his account. “I remember going to his first restaurant, it was so cool, so relaxed, good food and coffee… Years before his time,” noted chef Jamie Oliver.
