Despite everything, she took four long months to recruit the waiters, and a second pizzaiolo position is still vacant, explains Florence Christmann in the report at the head of the article. Despite this impasse, there is no question for her to further increase the proposed salary. In front of potential candidates, however, she puts forward other arguments: “Here, we have the advantage that the restaurant is closed on Sundays, so I tell them that it will never be open” that day, she insists.

In this other business, road transport this time, the boss has not skimped on the increases for a year. “It was 1995 euros net and today it is 2843 euros. It’s huge, there is almost 1000 euros each time of increase”, she explains, showing pay slips of her employees. An identical increase for its ten drivers, but still insufficient to convince new recruits. Five heavy truck drivers are missing from this company.
