The ideal breakfast for nutritionists? Here’s what they really eat during the week and on weekends

CUISINE – It is said to be the most important meal of the day. But depending on our schedule, our tastes and our needs to face the day, it’s difficult to know what to eat for breakfast. HuffPost asked two nutritionists what they really eat in the morning.

As you can see in the video at the top of the articleSophie Janvier, nutritionist in Paris and author of The gentle method to eat better (ed. Leduc), begins preparing his breakfast the day before, at 10:30 p.m. It will save me time and it will be better “, she explains. She mixes two tablespoons of cottage cheese with kefir yogurt, “ a fermented food excellent for boosting our microbiota ”, then adds a handful of oatmeal and a few chia seeds.

A consistent and delicious “overnight porridge”

What I like to do is let this mixture sit overnight in the fridge, it will give a softer and thicker texture, it’s what we call an “overnight porridge”. », explains the professional, mixing her preparation.

The rest of the recipe takes place the next morning, at 8:00 a.m. “ I woke up 45 minutes ago and I’m going to finish my porridge. The texture is almost gel-like thanks to the chia seeds », says Sophie Janvier, adding some hemp seeds, almonds and walnuts, then strawberries to her bowl. “ It’s beautiful, it’s super healthy, super gourmet “, she marvels while tasting her porridge “ filling and delicious “.

A savory breakfast for Sunday

On Sundays, I prefer a savory breakfast », begins Anne-Laure Laratte, dietitian nutritionist in Ille-et-Vilaine. On weekends, she has more time than during the week, which allows her to cook. “ I keep it simple though, everything is ready in less than ten minutes “, she explains.

Anne-Laure Laratte presents her recipe: “cThis morning I made myself two scrambled eggs with a little butter, for me it’s enough. Two tomatoes and homemade vinaigrette, which you can replace with a bowl of fruit. I also take a piece of bread for carbohydrates, it gives energy. And finally, a little cheese to eat on my bread. » Proteins, carbohydrates and fiber, enough to start the day well, according to the expert.

If you are vegetarian, you can replace the eggs with scrambled tofu and the butter with margarine. If you prefer to eat sweet, you can put jam on your bread and have a little dairy product to break up the sweet side and for its proteins, which maintain satiety all day long. », specifies Anne-Laure Laratte.

For the two nutritionists, the most important thing when it comes to breakfast is to spend “ a pleasant moment » and therefore choose balanced foods that you like.
