Pancakes – they are considered a connoisseur’s breakfast. But the popular pancakes also cut a fine figure as a savory or sweet main course, as a dessert or simply in between. No wonder, after all, they are irresistibly soft and fluffy, garnished with all sorts of delicacies: from fresh fruits, sweet chocolate sauce to classic maple syrup – there is almost nothing that doesn’t taste fantastic on pancakes.

Ingredients for two servings

  1. Grind the oats into oat flour in a stand mixer.
  2. Mix the eggs and quark in a bowl with a whisk until smooth.
  3. Stir in ground oats, protein powder, baking powder and salt.
  4. Heat coconut oil in a non-stick pan over medium heat.
  5. Using a ladle, carefully pour the pancake batter into the pan in portions and fry.
  6. Cook for about two minutes on each side, turning carefully so they don’t fall apart.
  7. Serve on a plate and garnish.
  8. Enjoy immediately.
