Ultimately, it’s the little things that decide which restaurateur wins a tender, says Michael Käfer. Accordingly, the managing director of the delicatessen giant had worked out the concept with which he recently applied for opera catering in great detail – with success. In mid-September, Käfer replaced Dallmayr after seven years. But Käfer looks back on a much longer history with the opera. Since it opened after reconstruction in 1963, Käfer was the in-house caterer for more than fifty years until Dallmayr won the contract in 2016.
