Mediterranean cuisine: These five recipes taste like a holiday in the south

Anne-Katrin Weber’s inner compass points south. To markets where fruit and vegetables stretch like Babylonian towers into the sky, where there is hustle and bustle and shimmering heat. To where the olive oil is grassy-green and where culinary delights are celebrated together for hours at large tables. If Weber thinks of the south, then of Italy, of Spain and Greece, France and Turkey, of the small island in the Mediterranean, the mountain village, the pulsating metropolis. If the language Mediterranae existed, it would be the language of their stomachs. Weber’s Cookbook”Hearty Vegan Mediterranean” is the invitation to a culinary journey through the south, into a world full of aromatic delicacies.

Mediterranean cuisine, that is sun-kissed feel-good cuisine. These are dishes that taste of Mediterranean lightness, of joie de vivre and passion. In addition, nowhere is it easier to feast healthy than in the countries on the Mediterranean. There is not just one Mediterranean cuisine, after all the Mediterranean region stretches over three continents, but they are united by a common culinary thread: lots of fresh fruit and vegetables, garlic, herbs and olive oil en masse.

Dishes that taste like vacation

Weber takes a specific look at the cuisine of popular travel destinations and chooses dishes that taste like vacations. In more than 70 recipes, she plays with typical ingredients such as chickpeas and polenta, and also reinterprets classics such as pizza and panacotta. She fills and grills, stews and roasts, au gratin and roasts. Serve up tapas and antipasti, salads and soups, aromatic vegetable dishes, dolci.

The special feature: the cook and ecotrophologist does not use any meat, fish, cheese or any other animal products in her recipes. But even as a purely plant-based meal, the dishes leave nothing to be desired, Weber promises – “neither the typical taste nor the pleasant feeling during and after the meal”.
