Kale with pee belongs to northern Germany and winter. You can eat the traditional dish in Oldenburg in a completely new version. Vegetarians don’t miss out either.

Sushi with Kale? Fans of winter vegetables can try this combination in Oldenburg. The menu at the Asian restaurant Moto Kitchen includes sushi combinations such as “Crunchy Pinkel” with pinkel and kale as well as a vegetarian version with pickled tomatoes, feta and kale. The basis of both variants are seaweed leaves and rice and kale. The roll is then fried and served hot.

It only took a day to find the right combination, said the restaurant’s owner Stephanie Tran. Her husband, Duy Hien Tran, is Asian and hasn’t had much to do with kale. “So the biggest challenge for him was cooking the cabbage.”

Oldenburg has been calling itself the “cabbage tour capital” for several years. At the beginning of November every year, the kale season is rung in with the “Hello Kale” festival. This year, festival organizers asked if the sushi restaurant wanted to participate. This is how the idea of ​​sushi with kale filling came about, the restaurant said. Sales are planned to last until February, as long as there is fresh kale.
