Enjoyment at Easter: Roast lamb recipe and why we eat it

Lamb is now everywhere on restaurant menus. And also on many Easter banquets. The Old Testament explains why this is so. And then we give tips on how to make the roast better.

Lamb meat is among the finest we can roast. How nice that this is easier to do today than it used to be. Lamb has long been easy to find, a) through the range of very good frozen goods from New Zealand and b) through the Turkish grocery stores, which often carry fresh meat even in smaller towns. Most of the lamb comes from Germany.
