1. Goblet training

The goblet formation is similar to that of a peach tree. We cut back the young scion to approximately 1 m, keeping 3 or 4 starts under the cut. The following prunings will consist of thinning the Heart of the tree so that light penetrates it.

Let the shaft rise on its central axis. Over the years, you will lighten the branches to encourage the renewal of fruit branches.

3. Fruiting pruning is carried out in autumn

Fruiting Size

It is carried out at harvest time or just after. It consists of shortening the branches that have borne fruit to allow the growth of young branches which will bear fruit the following year (2025), while retaining 3 to 6 fruit buds.

A delicious persimmon jam

Take 1 kg of ripe fruit. Cut a cap and remove the pulp with a spoon. Eliminate the glitches. Pour the pulp into a salad bowl and add 800 g of sugar and a split vanilla pod.

Leave to macerate an hour or two stirring occasionally. Cook everything in a jam basin for around ten minutes and add, at the end of cooking, the juice of half a lemon and a small cup of sugar with apple pectin (one sachet). Cook for two minutes, put in jars and close immediately.

If they are not very ripe, wrap them one by one in newspaper and leave them in the house for a few days, keeping an eye on them.
