When Odysseus and his companions entered the Cyclops’ cave, they could hardly believe their eyes: baskets full of cheese were piled in front of them, and next to them were tubs filled to the brim with whey. Stables provided space for a whole herd of sheep and goats, which the one-eyed giant patiently milked as soon as he returned. After all, Polyphemus, whose voice alone made the hearts of his companions break with horror, was just a simple shepherd with his own cheese dairy. This is how Homer describes it in the eighth century BC. The cheese that Polyphemos made was probably a simple brine cheese that is still ubiquitous in Greece today: feta.
