This is how you conjure up a great pasta with mushrooms – even if you can’t find any in the forest

Our columnist went to the mushrooms, found nothing – and instead used a powder to enchant his fall pasta. That’s his magic trick.

After meeting an acquaintance, who beamed about the discovery of three Krausen hens, I thought that such luck would look good on me. Curly hens, also known as fat hens, are tasty, bath-sponge-like forest mushrooms. I know nothing about wild mushrooms, but I do know an expert who, like me, has a strong inclination towards pleasure. I asked him for a little time, so last Saturday we hit the bushes with a basket and a mushroom cleaning brush.
