The Christmas classic: Nuremberg Elisen gingerbread

Christmas is around the corner.

A real classic that reminds us of our childhood is the classic Nuremberg gingerbread.

To bake this you will need:

6 eggs
250 grams of ground almonds
250 grams of ground hazelnuts
200 grams of orange peel
200 grams of lemon peel
200 couverture
wafers

And what you probably have at home:

180 rams of brown sugar
2 tbsp honey
2 tsp cinnamon
1 tsp gingerbread spice
1 pinch of salt

First, stir the eggs, sugar and honey until fluffy.

The remaining dough ingredients are then mixed in.

Then spread the dough on the wafers and place them on a baking tray lined with baking paper.

The recipe is enough for about 30-40 Lebkuchen.

The whole thing then goes into the oven for about 20 minutes at 150 degrees top and bottom heat.

When the little gingerbread has cooled down, you can cover it with couverture.

Now they are ready to eat or give away!
