Mr. Hein, you have been dealing with seahorses for a long time and have written a book about them. When did you first come across one?
I only knew them from children’s books until I was sent to Beijing as a journalist for a story about Chinese cuisine.
You had these cute animals on your plate?
Snakeskin was grilled at the market, next to it were such small, crooked things. Above all, I should test unusual things. I just got over it.
How do seahorses taste?
This only tasted burnt. Otherwise I wouldn’t eat seahorses anymore, especially not with the knowledge I have today.
