Recipe: Prepare delicious midnight pasta quickly and easily

Midnight pasta recipe

Ingredients for two people:

  • 125g spaghetti
  • Salt
  • 3 tablespoons extra virgin olive oil
  • 4 garlic cloves, peeled and roughly chopped
  • 4 anchovy fillets, rinsed and roughly chopped
  • 1 tbsp capers, rinsed and roughly chopped
  • ½ tsp dried chilli flakes
  • Parmesan for grating, to taste

1. Place the spaghetti in a large saucepan of heavily salted, boiling water until al dente. (Depending on the pasta brand, this will take 8 to 10 minutes, but check back regularly.)
2. While the pasta is cooking, heat the olive oil in a small skillet over medium-high heat. Add the garlic and sauté for about 1 minute without browning. Stir in the anchovies, capers and chilli flakes and continue to cook for another half minute, then turn off the heat.
3. Drain the pasta and return to the pot. Add the garlic mixture and toss well. If you like, you can add grated parmesan on top.
