Recipe for a pumpkin and potato casserole with a parmesan crust

Ingredients for four servings

  1. Peel, wash and cut the potatoes into thin slices. Wash the pumpkin, halve it, remove the seeds and cut into thin wedges. Peel the garlic cloves and onion and chop finely. Wash the parsley and shake dry.
  2. Preheat the oven to 200 degrees top/bottom heat. Grease a shallow baking dish (approx. 35 x 45 cm) with butter.
  3. Sauté the garlic and onions in a pot in a little butter. Deglaze with milk and cream. Add the spices to the mixture and bring to the boil.
  4. Remove from heat, stir in four tablespoons of Parmesan.
  5. Layer the potato and pumpkin slices in the baking dish and season with salt and pepper. Pour the sauce over everything and sprinkle with the remaining Parmesan.
  6. Bake on the middle shelf for about 45 minutes until the cheese is golden brown.
  7. Serve with fresh parsley.

Goes well with: a green salad.
