Recipe for a hearty casserole with pumpkin, minced meat and feta
Ingredients for four people
- 1 white onion
- 2 cloves of garlic
- 1 medium Hokkaido (800g to 1000g)
- 3 tbsp olive oil
- 2 tbsp tomato paste
- 500 g minced beef
- 500g chopped tomatoes
- 200 g sour cream
- 1 tsp vegetable broth powder
- 1 tsp sugar
- 1 tsp thyme
- 1 teaspoon paprika powder, very hot
- 1/2 tsp oregano
- salt and pepper
- 200g feta
- 2 tbsp pumpkin seeds
preparation
- Preheat oven to 180°C fan oven.
- Peel the onion and garlic cloves and chop finely.
- Halve the pumpkin, remove the seeds and cut into bite-sized pieces.
- Heat some olive oil in a high pan. Add tomato paste, onion and garlic and sauté.
- Add the minced meat and fry until crumbly.
- Then put the pumpkin in the pan, fry it briefly and deglaze with the tomatoes and sour cream. Add vegetable broth, sugar, thyme, paprika powder and oregano, stir well and bring to the boil.
- Season with salt and pepper.
- Put everything in a baking dish. Crumble the feta cheese over the casserole.
- Bake in the preheated oven for about 25 minutes.
- Arrange on plates and serve with pumpkin seeds.
