Recipe for a quick Pasta e Ceci in under 20 minutes
Ingredients for four servings
- 3 cloves of garlic
- 1 onion
- 1 bunch of fresh parsley
- 1 can of chickpeas (400g)
- 5 tbsp olive oil
- 3 tbsp tomato paste
- 1 tsp sugar
- 1 tsp Italian herbs
- 350 ml vegetable broth
- 400 g pureed tomatoes
- 500g pasta
- Salt pepper
- 80 g grated Parmesan

preparation
- Peel the garlic and onions and chop finely. Wash the parsley and shake dry. Drain the chickpeas in a sieve, rinse well and drain.
- Heat some olive oil in a pan. Add garlic and onion and sauté.
- Add tomato paste, sugar and Italian herbs. Allow the sugar to caramelize. Add chickpeas.
- Deglaze with about 300ml vegetable stock and pureed tomatoes. Season with salt and pepper and bring to the boil.
- Add pasta. Allow to cook for as long as directed on the package. Make sure there is enough liquid in the pot. Stir regularly.
- As soon as the pasta is cooked, season to taste and arrange on plates.
