It’s finally pumpkin time again.
There are many ways to enjoy the delicious vegetables. If you’re in a hurry and you don’t have much at home, this pumpkin recipe with just three ingredients is just the thing.
The delicious vegetables are in season from August to winter and can be enjoyed in many delicious variations.

Whether pumpkin from the oven, the classic pumpkin soup or as a pan-fried vegetable – the vegetable inspires with its nutty, slightly sweet and juicy taste.

But what if it has to be quick?

Then this recipe is just the thing: Stuffed pumpkin made from just three ingredients.

You need:

1 medium nutmeg squash

200 grams of feta

200 grams of quinoa

First cut the pumpkin in half, deseed it with a spoon and cook in the oven for 30 minutes at 160 degrees.

Meanwhile, wash the quinoa and boil it in the specified amount of water for ten minutes.

Next, cut the feta into small pieces.

Then drain the water and mix the cooked quinoa with the feta.

After 30 minutes, remove the squash from the oven and bake for another 10 minutes along with the quinoa and feta mixture.

The quick and delicious dish is ready.

The dish can be refined with curry and other spices such as salt, pepper, parsley or basil.

Of course, you can also use Hokkaido or butternut squash for the recipe instead of nutmeg. You can even eat the skin of the Hokkaido pumpkin.

A yoghurt dip is also wonderful with the oven pumpkin. Simply mix yoghurt with a few fresh spices and some lemon juice.

But even without extras, the dish tastes great with just three ingredients – and it’s also healthy and really filling.
