Jemma Melvin is helping to celebrate the British monarch’s 70th jubilee. She won the “Platinum Pudding” competition.

Jemma Melvin won the Queen’s 70th Jubilee dessert contest with a layered lemon and amaretto trifle. The 31-year-old prevailed in the final of the “Platinum Pudding” competition on Thursday evening.

The creation is thus the official royal dessert in the anniversary year – and as part of British royal dining history follows dishes such as “Coronation Chicken”, a chicken dish in honor of the coronation of Elizabeth II in 1953. A total of 5000 recipes were submitted for the competition.

The copywriter was inspired by the dessert at the 1947 royal wedding, when Lemon Posset was served, and by her grandparents. “This particular trifle is a tribute to three women: my grandmothers and the Queen herself,” Melvin told the PA news agency. Her one grandma taught her to bake, trifle was her other grandmother’s specialty, and the Queen had Lemon Posset at her wedding. The woman from Southport near Liverpool called her victory “unreal”.
