A wide variety of plant-based milk alternatives can now be found on supermarket shelves. Especially creamy and mild in taste: the cashew milk. Homemade is cheaper and free of packaging. Here’s the recipe.

Plant-based milk alternatives are now very popular. While cow’s milk has long been considered the nutrient bomb and the ultimate supplier of calcium, it no longer has a good reputation everywhere. Many people do without milk – the reasons for this are varied and range from ethical and moral motives to intolerance: the widespread lactose intolerance.

Creamy, full-bodied and mild in taste

The food industry has reacted to the change and adapted the product range: numerous plant-based milk alternatives are lined up on the supermarket shelves. They are usually made from nuts, grains or beans – and they taste different accordingly. The extensive range offers the right alternative for every taste.

While the widespread alternatives such as soy, oat or almond milk are often noticeable in the taste of the coffee and cannot always be foamed without problems, the alternative based on cashew nuts scores with an incomparable creaminess, full-bodiedness and mild taste. It is easy to froth and its consistency is most reminiscent of cow’s milk. Due to the high content of cashew nuts, the alternatives to buy are usually three times as expensive as cow’s milk. However, the delicious alternative can easily be made by yourself and is not only a lot cheaper, but also comes without packaging.

Healthy enjoyment from just three ingredients

The homemade cashew milk consists of only three ingredients. Cashew nuts form the basis – these give the later milk its mild, nutty, creamy, almost creamy taste. In addition, cashews, which botanically belong to the stone fruits, are veritable nutrient bombs. With almost 240 mg L-tryptophan per 100 grams, they literally make you happy. The amino acid is required by the body to produce the happiness hormone serotonin. In addition, cashews are rich in unsaturated and polyunsaturated fatty acids, are an excellent source of magnesium and phosphorus and also score with a good portion of protein. With the help of their high proportion of B vitamins, they also support the nerves and brain. Your choice of sweetness and a pinch of salt bring out the flavor of the cashews. A vegetable syrup is suitable for sweetening, but you can also omit it completely and thus prepare the cashew milk without sugar.

The finished product is not only pure pleasure. Whether in cappuccino or latte macchiato – the homemade milk can be frothed without any problems. The plant-based alternative is also a treat in muesli, porridge or processed in pastries.

Last but not least, it is a good substitute for cream in hearty dishes. Simply use less water and proceed as described below. Curries, stews and sauces can be refined and tastefully enhanced with cashew cream.

How to make cashew milk yourself

ingredients

  • 200 grams of cashew nuts
  • 400 milliliters of water for soaking the cashew nuts
  • 1 liter of water
  • date syrup/coconut syrup/agave syrup to taste
  • 1 pinch of salt

  1. Soak the cashew nuts in 400 milliliters of water for at least six hours.
  2. Drain the soaked cashews through a sieve and rinse with fresh water.
  3. Put the cashews, water and about one to two tablespoons of syrup of your choice in a blender and blend on the highest level for about two minutes.
  4. Drain the cashew milk through a cheesecloth or a fine kitchen towel.
  5. Wring out the cloth vigorously to collect all the liquid.
  6. Pour the finished cashew milk into a clean bottle and store in the fridge.

Tip: The homemade cashew milk can be kept refrigerated for about two to three days. Small solids may gradually settle out during storage. Simply shake the milk up again before use.
