Michelin stars 2023: “Haebel” gets the first Michelin star in St. Pauli

The dream of the first Michelin star has come true for the “Haebel” restaurant. The team has been working toward this for years. A conversation with restaurateur Fabio Haebel about the meaning of the star and the biggest problem in the industry.

In 2016 restaurateur Fabio Haebel thought for the first time about how “cool” it would be if St. Pauli had a starred restaurant. And now that thought has become a reality. His restaurant “Haebel” now has a Michelin star and is the first of its kind in Hamburg’s St. Pauli district.

Haebel runs two restaurants in Hamburg, the “Haebel” and the “XO Seafoodbar”, as well as a bakery called “baegeri” which specializes in sourdough. He also has his hands in the Ghost Kitchens “Circus”. I catch the restaurateur today in the home office, too many phone calls and emails that he has to answer.
