Mälzer: “Bigger challenges in gastronomy”

He explained to the “Hamburger Abendblatt” that it was a decision that had already been made before the Senate decided to extend the 2G plus rule to the catering trade. “We said to ourselves, we don’t want to react anymore, we want to act.”

“We see greater challenges in the catering industry in the coming weeks – also in view of the planned restrictions, which we very much support,” he told the newspaper. Although the chef was in favor of 2G plus, he also criticized the fact that there are currently too few quick test capacities. In addition, experience from other federal states has shown that the obligation to test is associated with considerable losses.

“The question arises as to what is the risk in relation to profitability,” said Mälzer. There have already been infections among his employees. “We have now decided that we should take a break.” After the “short creative break”, the Bullerei should continue “with full vigor, new ideas and a new menu”. With a “hygiene 2-G plus concept that is really bearable for everyone”.
