Creamy dairy ice cream is very difficult to produce without a machine. For a fruity water ice cream, however, you don’t need more than three basic ingredients – and the right molds. We’ll give you four delicious recipe ideas.

There are currently summery outside temperatures in many places. What better way to enjoy the beautiful weather than with a cool ice cream? All you need to prepare it are just these three basic ingredients: fresh fruit (or frozen fruit), water and a little sugar – alternatively, you can also control the sweetness with honey, agave syrup or maple syrup. With a hand blender and the right molds, you can conjure up delicious ice cream in no time without a machine. Below we present four recipe ideas.

Basic recipe: How to make your own water ice cream

For ice cream molds with six to eight cavities you need these quantities:

  • 150ml water
  • 250 to 300 g of fruit of your choice
  • 3 to 4 teaspoons sugar (or other sweetener)

Alternatively, you can also freeze ready-made juices or lemonade.

And this is how you can make your own water ice cream:

  1. If you use fresh fruit, they should first be washed and then cut into bite-sized pieces. Frozen fruit, on the other hand, should be allowed to thaw a little before being processed further.
  2. Take a hand blender (alternatively, a stand mixer will work) and use it to chop the fruit – together with the water and sugar – into a fine mass in a bowl.
  3. Fill the liquid water ice cream into the desired molds and then place them in the freezer for at least four hours.

Tip: After two hours, you can use a trick to speed up the freezing process – but it only works with Water ice cream cones: Hit it on the table so that the ice crystals contained in it are spread by the shock and the liquid can freeze faster.

There are different ice cream molds

Basically, you save money and protect the environment when you use reusable ice cream molds. The following models have received particularly many good reviews:

1. Popsicle stick

These classic ice cream molds are equally suitable for water and milk ice cream twelve compartments made from BPA-free silicone. Those needed for this Wooden popsicle sticks are included in the set, but only 50 pieces, but can be purchased later. Alternatively, ice cream molds are also available plastic stems.

2. Press molds

This is also very popular with children and adults reusable set made of dishwasher-safe silicone. The practical thing about these sealable and leak-proof molds is that you can simply squeeze out your homemade ice cream and enjoy it piece by piece.

3. Water ice with drip protection

Recipe ideas for children and adults

Without alcohol

  • Mango orange water ice cream: To prepare it you need half a mango, 100 milliliters of orange juice, 150 milliliters of water and a little honey. Then proceed as described above.
  • Watermelon and currant ice cream: You need 250 grams of watermelon (preferably without seeds), which you first cut into small cubes. Then puree this together with 120 milliliters of orange juice and two to three tablespoons of maple syrup to form a paste. Now add 50 grams of red currants and two chopped mint leaves and freeze the whole thing.

With alcohol

  • Gin and Tonic Water Ice: Gin and Tonic Water Ice: Take 480 milliliters of tonic water (it is best to shake several times so that the carbon dioxide can escape), two tablespoons of powdered sugar, 100 milliliters of water, the juice of two limes, 150 milliliters of gin, a quarter of cucumbers (cut into slices), fresh basil and Mint leaves. Then mix the powdered sugar with the water, lime juice and gin. Place a slice of cucumber and a leaf of mint and basil in each compartment. Then mix the tonic water with the gin mixture and distribute it evenly among the ice cream molds.
  • Wine and berry water ice cream: To prepare it, you need 150 grams of sugar, which you dissolve in 450 milliliters of boiling water. Then puree the syrup with washed raspberries and blackberries until a paste is formed – this must first be strained through a fine sieve before the puree can be mixed with 300 milliliters of red wine (dry) and poured into the molds. It’s better to allow six to eight hours for the water ice to freeze.
