Recipe for low carb pizza dough
preparation
- approx. 800g courgettes
- 1 tbsp salt
- 75g Parmesan
- 30g chickpea flour
- 75g grated cheese
- 1 clove of garlic
- 2 sprigs of basil
- 1 egg
- olive oil

- Grated cheese

preparation
Roughly grate the zucchini and mix in a bowl with the salt. Leave for 10-15 minutes so that the water drains from the zucchini. Place a sieve over a bowl and line with a kitchen towel. Fill in the shredded zucchini and squeeze out the water with the cloth. The mass should be fairly dry and loses a lot of volume. Mix grated zucchini with cheese, chickpea flour, chopped basil and garlic and the egg. Spread everything on oiled baking paper to form a pizza base and bake on a preheated baking sheet or pizza stone for 8-10 minutes. Take the pizza base out of the oven and top it with the topping of your choice. Bake for another 3-5 minutes.
