Vivian Glover kneels next to one of her beds in Hoxhohl, Hesse, and lifts out a handful of soil. “As many creatures live there as there are people in the world,” she says. They ensure that the soil “clumps together nicely and becomes slimy”. She rubs the dark lump between her fingers and it breaks into loose crumbs. Dead earth, on the other hand, she says, breaks apart into hard chunks. For Glover, 36, soil is the basis for all life – and profitable work.
