Indian cooking: four spices you should have on your shelf

For Indian cooks, the shiny silver spice jar is the most important tool and the key to the special dishes of Indian cuisine. Dubbed a dabba, the container keeps spices fresh and organized in one convenient place.

It differs from a spice rack in that the individual jars in the container are open and you can add a pinch of this and a pinch of that at will – without having to fiddle with the lids. In the Dabba, the spices are individual depending on the region of India and also adapt to the tastes of the cooks.
