Green asparagus is becoming increasingly popular! The reason is simple: green asparagus cooks fairly quickly and is considered healthier than white asparagus. But it has another crucial advantage: you don’t necessarily have to peel it!
The reason: Green asparagus grows above the ground; where the sun has turned the spears green, the skin is soft. Most of the vitamins are hidden under the peel, which is why you should never peel the upper part of the green asparagus.

At least two centimeters should always be cut off from the lower end of the asparagus.

If the lower end of the asparagus is whitish-purple, the lower, lighter third should be peeled.

Tip: As with white asparagus, the sections and peels can be used for asparagus soup.
