Fleischschnacka is an Alsatian dish that is more like a pasta roll. The French version of the Maultasche is finer and at the same time more complex in taste.

I ate these hearty snails for the first time in a tavern in the middle of Alsace. They came in a creamy white wine sauce and were so hearty that I was only able to wash them down with lots of fresh Riesling. But they are also available in a classic clear meat broth, like the Maultaschen.
