Fanny Herpin’s recipe for burgers and kebabs based on the modeling clay of her childhood

Dishes to be modeled high in colors and flavors. Fanny Herpin, young chef at the restaurant Camondo, in Paris, took up the Play-Doh challenge: imagine two sandwiches with soft textures and flashy colors, inspired by the brand’s modeling clay. Children will love it and their parents too, no doubt.

“The idea was to rediscover the colors of the modeling clay of my childhood,” confides Fanny Herpin to 20 minutes. The result are two impactful sandwiches, which evoke memories of happy times with my loved ones, but which I hope will stand out because they are both very visual and super good. »

Rainbow burger and Sunny kebab

The Camondo chef had fun with colors and rolling, crushing, crumbling, kneading her ingredients. The first of his sandwiches is called the Rainbow burger, but this funny burger is actually made of Icelandic salmon in gravlax colored with beets, Greek yogurt with turmeric and dill, fennel in pickles and fried onions in a purple bun.

The second is called Sunny kebab and it looks like a kebab. But without meat since his yellow pita bread contains halloumi colored in blue, sweet potato with spices and maple syrup, pomegranate seeds and corn cream dyed green…

In limited edition

Fanny Herpin’s two sandwiches are dishes that are eaten cold. Which is good since they are only offered for delivery (on Deliveroo). For logistical reasons, the young Parisian chef will only prepare 30 per day, between Monday February 20 and Sunday February 26. It is therefore an archi-limited edition, sold between 11 and 12 euros per sandwich.
