The invitation to travel comes to us from Christophe Boyer and it takes us very, very far. “The confinement made me want to rediscover the flavors of my travels in Vietnam”, says this former real estate agent who opened a food truck in Violès (Vaucluse) last year with his Vietnamese wife. And his minced Charolais beef steak is marinated in a mixture of pressed garlic, fresh chopped lemongrass, oyster sauce. “It brings a soft side to the meat while keeping the lamb’s lettuce and above all a sweet and salty side,” explains the chef.
