There are very few women among the more than 300 men on the list of star chefs in Germany. The documentary “She Chef” tells the story of a young cook who wants to be at the top.

by Walli Mueller

The suitcases are packed, the rucksack bulging; Agnes Karrasch is drawn out into the world of haute cuisine. At 25, the Austrian has just completed her apprenticeship in a top Viennese restaurant and won the World Cooking Championship with the national youth team. Now their years of apprenticeship and travel should begin. First stop: the star restaurant “Vendome” in Bergisch-Gladbach, managed by Joachim Wissler.

Agnes Karrasch is a great protagonist

Agnes immediately meets a colleague because she is starting out in the patisserie. The few women who work in top kitchens are most likely to be found here, preparing the desserts. But Agnes definitely wants to use the stove too! Into the sweaty high-performance area of such a kitchen; sweating over steaming cauldrons and sizzling pans, always under time pressure.

The fact that the film team (headed by the director duo Melanie Liebheit and Gereon Wetzel) was able to squeeze into the cramped and hectic hustle and bustle of such a kitchen is very fortunate. Because in “She Chef” you get unique insights behind the scenes of top gastronomy. For minutes, the camera simply watches how the chefs prepare wonderful delicacies from exquisite ingredients. The eye eats with you. And with Agnes Karrasch, the film has a great protagonist. The robust, confident young woman knows what she already knows and is hungry to learn much more.

“She Chef”: A journey through the world of star kitchens

When she was a teenager, Agnes says, she would not have been able to cope with the stress and sometimes harsh tone that prevails in restaurant kitchens. That’s why she’s glad she didn’t start her apprenticeship until she was in her early 20s. But now she is determined to conquer the male domain for herself – and maybe to change the conditions a little. “It’s always like this with us: huh or hott. You either go to a normal restaurant and have eight-hour days – but then you’re simply depressed about the food. And in the star kitchen you feel great, but the rest of your life doesn’t exist,” says Agnes Karrasch.

She gets more private life than she would like at her second stop at “Disfrutar” in Barcelona. Because here she is being caught up by the Corona lockdown. Station three, the “coke” on the Faroe Islands, brings you pretty close to your ideal cuisine. She can fish the seafood herself with her cheerful colleagues right outside the front door.

“She Chef” is a wonderful journey through the world of star cuisine. Between sow’s head and sea urchin, traditional and molecular cuisine. In addition, the robust young cook – a pleasure to watch!
