Recipe Fava: A Greek puree made from chickpeas

Greek food is much finer than many gyros restaurants let on. This is also noticeable when enjoying fava – a puree made from yellow vetchling peas, with Kalamata olives and red onions.

“Let’s go eat Greek,” my husband suggests. I answer: “There’s no way you’re dragging me to that shovel Greek again!” Shovel Greeks: These are the restaurants that serve a pile of fries with a mountain of pork they call gyros, topped with raw white onions and sprinkled with heaps of paprika. My husband doesn’t understand what’s wrong with that. For me, however, this food is an insult to Greek cuisine and only there to be scooped up.
