Local round: A star chef leaves the city – Munich

Munich loses another star chef: Virginie Protat32, the chef of the Tantric DNA, will soon be leaving the house. This has now been confirmed by a press spokeswoman for the Schwabing star restaurant of the SZ. After the general renovation of the legendary gourmet restaurant in autumn 2021, the French Protat took over the management of the restaurant area, which is dedicated to the reinterpretation of classic Tantris dishes. Just a few months later, she was awarded a star in the Michelin Guide. After almost two years she is now leaving Tantris again, it is not yet known where she will go.

After Maike Menzel, who earned a star in the Schwarzreiter restaurant of the Hotel Vier Jahreszeiten in 2018 and did not return there after her parental leave in 2021, the city loses another female top chef. It remains: Sigi Schelling, formerly sous-chef at Tantris, she also has a Michelin star with her new Werneckhof restaurant. Your restaurant is particularly popular with friends of the former Tantris cuisine. And then there’s Nathalie Leblond from Les Deux. She shares a star with her colleague Gregor Goncharov.

In Tantris now takes over Benjamin Chmura, 34, from the gourmet restaurant that has two stars, also the Tantris DNA as chef. There is supposed to be a lot of turnover in the Tantris kitchen, but despite the undeniably high quality, it is much easier to get a table in the restaurant than it was before the refurbishment. This is probably one of the reasons why Tantris now also offers special experiences, such as this Dinner au Passe, i.e. a dinner at the kitchen pass, where you have an exclusive view of the kitchen. There is a tour of the whole house, a special menu, wine and cocktails for a small group of up to six people (Dîner au Passe at Tantris, Johann-Fichte-Straße 7, bookable for 4-6 people, per person 750 euros, Wednesdays and Thursdays 6.30 p.m. to midnight, telephone 361 65 90, www.tantris.de).

By the way, there are star chefs who say: The bread and butter offers the greatest pleasure. The basis for this can be explored more closely in the coming week from Tuesday on at the Viktualienmarkt. That’s where the fifth time takes place Munich Bread Market instead of. Eleven different guild bakers will present their specialties. And in the Bäckman bus, preschool and elementary school children can bake their own bread and rolls with the bakers (Munich bread market, Tuesday to Saturday, May 23 to 27, daily 10 a.m. to 6 p.m., www.brotmarkt.com).
