Breakfast – power for the morning
Fluffy blueberry pancakes
Ingredients for 2-4 people:
- 350 g blueberries (see tip)
- 200 g spelled flour • 1 tsp baking powder
- ½ tsp baking soda
- 3 tbsp coconut oil
- 2 eggs (size M)
- 5 tbsp maple syrup
- Salt
- 200 g cream yoghurt
- Zest ½ organic lemon
- 200ml milk
- 200 g sour cream
- 1 tsp vanilla paste
Preparation time: approx. 35 minutes
1. Wash the blueberries and pat dry with kitchen paper. Mix flour, baking powder and baking soda. Melt 2 tbsp coconut oil in a saucepan or in the microwave. Beat the eggs, 3 tablespoons of maple syrup and a pinch of salt with the whisk of the mixer for about 5 minutes until thick and creamy.
