Breakfast for gourmets: pancakes with a vegan alternative and without refined sugar

Ingredients for 2-4 people:

  • 350 g blueberries (see tip)
  • 200 g spelled flour • 1 tsp baking powder
  • ½ tsp baking soda
  • 3 tbsp coconut oil
  • 2 eggs (size M)
  • 5 tbsp maple syrup
  • Salt
  • 200 g cream yoghurt
  • Zest ½ organic lemon
  • 200ml milk
  • 200 g sour cream
  • 1 tsp vanilla paste

Preparation time: approx. 35 minutes

1. Wash the blueberries and pat dry with kitchen paper. Mix flour, baking powder and baking soda. Melt 2 tbsp coconut oil in a saucepan or in the microwave. Beat the eggs, 3 tablespoons of maple syrup and a pinch of salt with the whisk of the mixer for about 5 minutes until thick and creamy.
