According to various surveys, Christmas Eve divides Germany into two culinary camps. Some have sausages with potato salad, others have roast goose including red cabbage and at least hand-made potato dumplings. Some have to throw a maximum of sausages from the jar into a pot and tear open a pack of lettuce – that’s it. The others need pots, roasters, oven, thermometer, time – and above all knowledge: How long does the roast have to simmer – in hot air or top/bottom heat? 180 or 230 degrees Celsius or is it better to cook it at a low temperature so that it stays nice and juicy?
