Recipe for a hearty minced meat and rice casserole for after work
Ingredients for four servings
- 400 g minced beef
- 2 onions
- 5 cloves of garlic
- 500 g chopped tomatoes
- 2 tsp oregano
- 1 pinch of sugar
- Salt, pepper
- 250 g basmati rice, dry weight
- 400 ml beef broth
- 200 g Cheddar, strong
- 1 cup sour cream
- 3 to 4 tablespoons olive oil, virgin
preparation
- Cook rice according to package instructions.
- Peel onions and garlic and chop finely.
- Heat some olive oil in a pan. Add garlic and onions and fry in the hot oil.
- Add the minced meat and fry thoroughly. Season with salt and pepper.
- Add the chopped tomatoes, oregano and sugar.
- Pour in the stock and season with salt and pepper. Allow to simmer briefly. Finally, fold in the rice.
- Grease a baking dish with a little olive oil. Pour the mixture into the dish and sprinkle with the cheddar cheese. Bake in the oven at 180 degrees for about 25 minutes until golden brown.
- Serve with sour cream.
