Delicious fast food from Japan: You need a lot of hot oil for this karaage recipe. After that it’s: Knurps! Knurps!
Sometimes food tastes best quickly, as in the case of karaage, a Japanese fast food. It’s chicken thighs, marinated in a spicy way and fried twice. Crispy on the outside, very tender on the inside. The Asia flavor comes from the marinade made from ginger, soy sauce and sake.

Ingredients for 4 persons:
- 750 g boneless skinless chicken thighs (about 4-6 pieces)
- ½ tsp salt
- freshly ground black pepper
- 2 tbsp cornstarch
- 2 tablespoons flour type 550
- 1 liter tasteless oil (sunflower oil, rapeseed oil, etc., for frying)
For the marinade
- ½ tsp grated ginger
- 1 garlic clove, chopped
- ½ tbsp soy sauce
- ½ tbsp sake (alternatively sherry or Chinese rice wine)
- ½ tsp toasted sesame oil
